`Ingredients
- 1/4 kilo all-purpose flour (maida)
- Salt to taste
- 3-4 tablespoons of lukewarm ghee
- Water
- 3 tablespoons of frozen ghee
- 2 tablespoons of rice flour
- Chaat masala
- Oil
Method
Take the all-purpose flour on a plate, and add salt to it. Now, add lukewarm ghee to the mixture. Now, mix this mixture using your hand, and then take a lump in your hand and tighten your fist (see the image below). If the impression of your fingers stays in place on the lump, then the consistency of the mixture is proper. If the flour separates out, you must add more ghee to the mixture.

Now, add water to this mixture to prepare the dough, and then let it rest for 30 minutes.
Take frozen ghee in a cup, add rice flour to it and mix well. This mixture is called saato. Now, take out small balls from the above dough. Flatten out each ball in the circular shape of a roti using a rolling pin. Take one such roti, and spread about 1/4 teaspoon of saato on it using your finger. Now place another roti on top of this one and apply saato on this roti as well. Then again place a roti on top of this one. Repeat this till 4 rotis are stacked together. Now, roll this stack of 4 rotis into a cylindrical shape. Now use a knife to break this cylinder into smaller cylinders. The detailed steps can be found in the video below.
Now, take one such cylinder and place it on its flat surface and then gently flatten it into the circular shape of a puri. This will appear as a multi-layered puri.

Now fry this puri in oil at a low flame, till it is golden-brown in color. After it is fried, sprinkle chaat masala on top of it. After it cools down, store it in an air-tight container. This crispy snack adds to the festive vibes during Diwali!
