Ingredients (serves 4-5 people)
Ingredients for dough:
- 1 cup all-purpose flour
- 3 tablespoon rawa
- Salt to taste
- 3 tablespoon lukewarm ghee (clarified butter)
- Water as per requirement
Ingredients for samosa stuffing
- 1 tablespoon ghee (clarified butter)
- 1 teaspoon cumin seeds (jeera)
- 2 tablespoon oil
- 1 teaspoon fennel seeds (saunf)
- 1 teaspoon coriander seeds
- 1/4 teaspoon asafoetida (hing)
- 1 teaspoon green-chilly paste
- 1/2 teaspoon ginger paste
- 2 finely chopped onions
- Salt to taste
- 1 teaspoon red-chilly powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon Kitchen King masala powder
- 1 teaspoon pomegranate powder (anardana powder)
- 1 teaspoon dry mango powder (aamchur powder)
- 3 tablespoon coriander leaves (kothmir)
- 3/4 kilo boiled potatoes
Ingredients for chaat
- 1 cup green chutney
- 1 cup garlic chutney
- Chaat masala for sprinkling
- 1 cup sweet chutney
- 1 cup sweet curd
- Nylon sev
- 1 cup crushed puri
Method
Preparing the dough
Take all-purpose flour on a plate. Add rawa, salt, and lukewarm ghee to the flour and thoroughly mix. Keep adding water as required while mixing, and prepare a paratha-type dough. Adding lukewarm ghee to the dough adds to the crispiness of the exterior part of the samosa. Let this dough rest for about 20 minutes.
Preparing the samosa stuffing
Now take oil and ghee in a pan and heat it. Then add cumin seeds to the pan. Once the cumin seeds are roasted, add fennel seeds, coriander seeds, and asafoetida to the pan, and stir for 2-3 seconds. Then add green chilly paste and ginger paste and stir the mixture. Now add finely chopped onions and proportional salt to the mixture. Stir till the onions are light-pink in color. Then add red-chilly powder, turmeric powder, garama masala powder, Kitchen King masala powder, pomegranate powder, dry mango powder, and coriander leaves.
Now squash the boiled potatoes and add to the pan. Mix this thoroughly and your stuffing for the samosa is ready. Now turn off the gas and let the stuffing cool.
Preparing the samosa
Now, take out small balls from the dough. Take one such ball and flatten it into a circle using a rolling pin. Now slice it into 2 equal semi-circular parts. Take one half and bend it in the shape of a samosa (see the images). Fill this with 1-1.5 teaspoons of stuffing. Then seal it from the top with the help of water. Do the same with the second semi-circular part. Prepare multiple samosas from the dough this way. Once prepared, fry them in hot oil at a slow flame.
Preparing the chaat
Now take a prepared samosa on a plate and crush it. Add curd, green chutney, garlic chutney, and sweet chutney on top of this samosa in order. Now sprinkle finely chopped onions, chaat masala, nylon sev, and optionally crushed puri on top. Your delicious samosa chaat is now prepared.
