How to make cheese pulao at home

Need something out-of-the-ordinary for dinner tonight? Here’s a recipe perfect for you. Easy to make, delicious, and satisfying, this is perfect for a weekend dinner treat.

Ingredients (for 4 people):

  • 2 cups basmati rice
  • 2 onions
  • 1 capsicum
  • 2 tomatoes
  • 2 carrots
  • 1/4 cup green peas
  • 2 potatoes
  • 1/2 cup cauliflower
  • 1 spoon of ginger paste
  • 1 spoon of garlic paste
  • 2 spoons of red chilli chutney
  • 2 spoons of kashmiri red chilli powder
  • 1/2 spoon of turmeric powder
  • 1 spoon of coriander powder
  • salt to taste
  • 1 spoon of dry fenugreek leaves (kasuri methi)
  • 1 spoon of garam masala
  • 2 spoons of Amul butter
  • 2 spoons of oil
  • 1 spoon of cumin seeds (jeera)

Method

Rinse the basmati rice with water 2-3 times, and then keep them soaked in water for an hour. Then add salt to the rice and boil it until the rice is cooked (use the following proportion for adding water while boiling: 4 glasses of water for every 2 cups of rice). Once cooked, take out the rice in a strainer to let the water escape.

Next, in a cooking pan, add all the vegetables (finely chopped and rinsed) except for onions and tomatoes, 1 glass of water and salt, and boil the mixture. Once the vegetables are boiled, take them out in a strainer. Collect the water escaping from the strainer in a bowl. It forms the vegetable stock that can be used in the pulao itself, or in some other preparations (like the gravy of a curry).

Now, take a large pan and add oil and butter. Once the butter melts, add cumin seeds (jeera). Once the cumin seeds are roasted, add chopped onions to the pan (and salt in proportion) and fry them till their color turns to light pink. Then add ginger paste, garlic paste, and red chilly chutney and stir the mixture. Now add chopped tomatoes to the mixture and once they are cooked, add the boiled vegetables to the mixture and stir well. Then add all the spices to this mixture, followed by vegetable stock, and stir the mixture for some time.

Now add the prepared rice to this mixture. Mix the entire preparation thoroughly for uniformity. Now, take this pulao in a bowl, and invert the bowl on a plate. Slowly take out the bowl. You’ll see a mound of pulao on the plate. Grate cheese on top of the mound and serve it (optionally with raita). Congratulations on preparing your delicious home-made pulao.
