Ingredients (for 8-10 sandwiches)
- 1 cup hung curd
- 1 grated carrot
- 2 medium-sized cucumbers
- 1-2 capsicums
- 2 medium-sized onions
- 1/4 cup finely chopped cabbage
- 2 tablespoons green coriander leaves
- 3 finely chopped green chilies
- 1 teaspoon chaat masala
- 1 teaspoon paprika
- 1/4 teaspoon black pepper powder
- 1 teaspoon oregano
- 1 teaspoon mixed herbs
- Salt to taste
- 1 packet of bread (any kind of bread will work: wheat, multigrain, etc.)
- 1 cup green chutney

Method
Take hung curd in a bowl and add chopped carrots, onions, capsicum, cucumbers, and cabbage to the bowl. Then add finely chopped green chilly, coriander leaves, chaat masala, salt, black pepper, paprika, oregano, and mixed herbs to the bowl. Now mix the contents of the bowl thoroughly.

Take two slices of bread, and apply chutney to one side of each. Spread 2 spoonfuls worth of the above mixture on one slice of the bread. Now place the other bread slice on top to prepare your sandwich. The chutney sides of both the bread slices are internal, in contact with the mixture. Now, place this sandwich in a hand toaster, and toast it till it is brown on both sides. Once toasted, take out this toasted sandwich on a plate, cut it into two pieces, and serve with green chutney.
This is a very healthy sandwich. The curd provides calcium, the vegetables provide fiber and vitamins and the sandwich overall provides a delicious taste. Cheese can be optionally grated on top of this sandwich for better taste.
