Ingredients (for 10-11 parathas)
- 1 bowl of wheat flour
- Salt to taste
- 4 tablespoon oil
- Water as required
- 500g grated cauliflower
- 2 finely chopped onions
- 1 tablespoon cumin seeds (jeera)
- 1/4 teaspoon asafoetida (hing)
- 1 tablespoon green chilly paste
- 1/2 teaspoon of ginger paste
- 1 tablespoon finely chopped garlic
- 2 teaspoon Kashmiri red chilly powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon Kitchen King masala
- 1 teaspoon chaat masala
- 1/2 teaspoon raw mango powder (aamchur powder)
- 1 teaspoon fenugreek leaves (kasoori methi)
- 1 cube cheese (grated)
- 2-3 tablespoon coriander leaves
Method
Take the wheat flour on a plate and add the required amount of salt to it. Add 2 tablespoons of oil to the mixture and mix with your hands. Then keep adding water to this mixture to prepare the dough. Then apply some oil on the palm of your hands and knead the dough. Let this dough rest for 30 minutes.
Rinse the cauliflower well with water and grate it. Take 2 tablespoons of oil in a pan and heat it. Then add cumin seeds to the oil. Once these are roasted, add asafoetida to the pan. Then add green chilly paste, ginger paste, and finely chopped garlic to the pan and mix these ingredients thoroughly. Next, add finely chopped onions to the pan and stir until they become pinkish. Then add the grated cauliflower to the pan and keep stirring on low flame till all the water released by the cauliflower is evaporated. Then add all the masalas to the pan and mix thoroughly. Finally, add and mix coriander leaves and turn off the heat and let this mixture cool.
Now, make tiny balls from the dough. Take one such ball, and flatten it into a circular shape of a roti using a rolling pin. Use dry wheat flour while flattening the ball. Now, take 1/2 spoon of the above mixture and place it on this circular flattened roti. Wrap the roti around this mixture. Now, again flatten out this stuffed ball in the shape of a paratha, and then roast it on a pan on medium flame till it is brownish in color. You can apply ghee or butter for roasting this paratha. Your delicious paratha is ready to be served with ketchup or chutney.
