Aloo Cheese Frankie with Secret Ingredient Chuntey

Ingredients

  • For dough
    • 1 bowl wheat flour
    • 1 bowl all-purpose flour (maida)
    • 2-3 tablespoon lukewarm ghee
    • Salt to taste
    • Water as required
  • For patice
    • 1/2 kg potatoes
    • 1 1/2 tablespoon ginger and green-chilly paste
    • Salt to taste
    • 1 tablespoon lemon juice
    • Coriander leaves
  • For chutney
    • 1 bowl of mint leaves (pudina, your secret ingredient)
    • 1 bowl coriander leaves
    • 6-7 pc green chilly
    • 8-10 curry leaves (limdo)
    • 1/2 tablespoon salt
    • 1/2 tablespoon black salt (sanchar powder)
    • 1 teaspoon cumin seeds (jeera)
    • 1 1/2 teaspoon lemon juice
  • For Frankie masala
    • 1/2 teaspoon black salt (sanchar powder)
    • 1 tablespoon red-chilly powder
    • 1/2 teaspoon raw mango powder (aamchur powder)
    • 1/2 teaspoon salt

In addition, you will need 2-3 finely chopped onions. Grated cheese is optional

Method

For chuntney

In a mixer jar, take coriander leaves, mint leaves, green chilly, curry leaves, salt, black salt, cumin seeds, and lemon juice. Add 3-4 ice cubes to this jar, and turn on the mixer to prepare the chutney.

For tortillas

On a plate, mix wheat flour and all purpose flour in the desired proportion (you can also opt for skipping all-purpose flour altogether). Add lukewarm ghee to the mixture, followed by salt. Using your hands, mix this mixture thoroughly. Keep adding small quantities of water while mixing and prepare a dough similar to a roti dough. Once the dough is ready, add 1 1/2 teaspoon of ghee and knead it thoroughly. Let it rest for 20-25 minutes.

Then take out small balls from this dough, and using wheat flour and rolling pin, prepare rotis. Partially roast these rotis on a pan. Your tortillas are now prepared.

For patice

Boil the potatoes in a pressure cooker. Then peel them off and smash them using a smasher. Add salt, ginger-green chilly paste, coriander leaves, and lemon juice to the smashed potatoes, and mix thoroughly. Next, prepare small patices from this mixute. On a non-stick pan, roast these patices with oil till they become brownish in color (see the video below for reference) on both sides.

For Frankie masala

Mix the ingredients listed above for frankie masala.

Frankie

Take a tortilla on a pan and roast it by applying ghee on both sides. After one side is roasted, flip the tortilla, make the gas flame slow, and apply chutney on the roasted side and sprinkle frankie masala on top. Place the patice on the tortilla and sprinkle finely chopped onions on top. If required, grate cheese on top. Fold the tortilla to prepare the frankie. It is ready to be served!
